She did her first wedding cake at 16 and sold cakes to her friends at school as well as bussing tables. After high school the natural choice was to attend culinary school. Being the late 80’s there was not as many choices that there is now for culinary technology. But someone told her about the rigorous and well regarded Culinary Program at Asheville-Buncombe Technical Community College. Denise also continued to explore and advance her knowledge in the desserts. Her desire to excel in the food service industry enabled her to run a kitchen before she was in her 20’s.
After culinary school she moved to Hilton Head Is. with some friends, for new challenges and gain experience. Contemporary Italian, French, American, and South Western, are some of the place’s that she worked. She also started a small catering business serving a variety of visitors to the island with many different needs. She has always chosen private owned small restaurant and the catering because of the more personal touch that you can contribute to the food.
Once their first son was born they both decided it was important to move near family. Denise’s father and she had always talked about opening a restaurant. So the move to Cleveland County was also to move forward on the pursuit of opening their own restaurant.
Since moving they both have worked at many local restaurants as well as The Cleveland County Club and Tradewinds (a seafood and island theme restaurant in Lincoln County).
Dallas and Denise both believe that fresh ingredients and making as much as possible from scratch is the key to setting yourself apart from most places today. But more importantly it just tastes so much better. But they also believe that great food can be affordable to everyone and that is their goal at The Sweezy House. They want to offer the comforts of home style southern cooking as well as the exciting innovated taste of fine dining. The best of both worlds all for you to enjoy.
